Try These Hearty Pumpkin Spice Protein Cookies

It’s officially fall, which means it’s pumpkin spice season! It’s also a great time to get back into baking. We were inspired by the flavours of Rumble Vanilla Maple to create this recipe for Hearty Rumble Pumpkin Spice Cookies, complete with maple glaze. 

These are no ordinary cookies - they’re dense, chewy, and full of fibre, protein, and healthy fats. These cookies will satisfy your sweet pumpkin spice cravings AND keep you going until dinner!

Ingredients

2.5 cups of rolled oats

2.5 cups of whole wheat flour

1/2 tsp baking soda

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp of ground ginger

1/2 tsp of cloves

1/2 tsp all spice

1/2 tsp salt

1 Vanilla Maple Rumble

1 cup pumpkin puree (canned, or make your own: peel and chop a small pumpkin, microwave for a few minutes until soft, then puree using a blender or immersion blender)

1 egg

1/4 cup olive oil

1/3 cup of maple syrup

1/2 tsp vanilla extract

Directions

Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Whisk together dry ingredients in a large bowl. Add the remaining ingredients, and stir to combine. Spoon batter onto baking sheets. These cookies don’t spread when baking, so pat down the tops to get a more traditional cookie shape. Bake for 12-15 minutes, until bottoms just start to turn golden brown. Let cool on a cooling rack. Enjoy as-is for a hearty, healthy ‘breakfast’ style cookie, or add a drizzle of maple glaze (2 tbsp maple syrup, ½ cup icing sugar) for a sweeter kick! Makes 24 cookies.
