The Tastiest Rumble Coffee Bean and Chocolate Chip Muffins

Coffee and a muffin is the classic on-the-go breakfast. We wanted to do better, which is why we made Coffee Bean Rumble, packed with 20 grams of protein, healthy fats, and fibre, alongside organic fairtrade coffee. But what if we went one step further? What if we put Coffee Bean Rumble INSIDE a muffin? 

We tested it out, and threw in some chocolate chips for good measure. The result is a delicious, coffee-infused muffin treat. Make a batch and store them in your freezer for an easy packable snack!


1/2 cup of butter, melted

1/4 cup of maple syrup

1 tsp vanilla extract

1 Coffee Bean Rumble

2 eggs

2 cups whole wheat flour

2 1/2 tsp baking powder

1/2 tsp salt

3/4 cup semi-sweet chocolate chips

For the streusel topping:

1/3 cup flour

1/4 cup brown sugar

1/2 tsp cinnamon

3 tablespoons cold butter


Preheat your oven to 350 degrees. Line muffin pans with paper liners. Combine the ingredients for the streusel topping in a small bowl and mix with your hands. Whisk together wet ingredients, then add remaining ingredients and stir to combine. Pour batter into your muffin liners, and top with crumbled streusel and optional additional chocolate chips. Bake for 25-30 minutes, or until inserted toothpick or knife comes out clean.
