The Chocolate Mint Protein Brownies of Your Dreams

Tis the season for holiday treats! Give yourself a break from the shortbread with this delicious and healthy recipe for chocolate mint protein brownies. Packed full of protein, light on sugar, and loaded with the goodness of whole wheat, these brownies will satisfy your hunger while tricking your taste buds. Make them to share with your friends and family at your next holiday get together! 

Ingredients

1/4 cup maple syrup

1/4 cup olive oil

1 carton of Rumble Dutch Cocoa

2 large eggs

1/2 tsp natural peppermint extract

2 1/2 cups whole wheat or spelt flour

2/3 cup of cocoa powder

1/2 tsp salt

1 tsp baking soda

1/2 tsp baking powder

1 cup of chocolate chips

1 candy cane (finely chopped or crushed)

 

Directions

Preheat oven to 350 degrees.

Whisk together maple syrup and olive oil. Whisk in the eggs then add the Rumble and peppermint extract.

In the same bowl, add all remaining ingredients except the chocolate chips. Mix well until fully combined. Batter will be thick and sticky - don't panic! Stir in the chocolate chips. 

You can make brownies or cookies with this batter. If making brownies, do your best to spread the thick batter evenly on a parchment paper-lined baking sheet. If making cookies, spoon batter in dollops onto the parchment-lined baking sheet.

For brownies, bake for 15-20 minutes, or until inserted toothpick comes out clean. Sprinkle and press crushed candy cane over top of the brownie sheet while hot. Wait for brownies to cool on the pan before slicing into bars.

For cookies, bake 10-12 minutes, and cool on a cooling rack.
